There is "fusion" which bring out flavors that didn't mix before for a new experience and then there is the disaster fusion where nothing is done right. Yes! Looking at the pictures, I can still remember the taste of the bowl of Pho that I had and looking forward to the next one. Overall, the generous portions, delicious Pho recipe, easy-going atmosphere, and friendly service makes dining at Pho Bac a nice treat. Adding in the extras such as the basil, bean sprouts, a spritz of lime, and condiments gives the soup another layer of subtle complexity. The noodles were evenly cooked and the beef slices and meatballs were tender, not bland but absorbed the broth's flavor. The broth is flavorful, with many distinct nuances (beefy, light, not too oily, deep lingering taste, robust, etc). The Pho portion size is very generous and a Large can be very filling. You choose your Pho and other items up front as well as making your payment. The restaurant is now located in a more modern space with more of a traditional dining area. Pho Bac is an established Vietnamese restaurant in the International District and it is understandable how they have fared well for so long. It has been a few years since I dined at the restaurant which was originally at the boat-shaped restaurant across the parking lot. Went to Pho Bac for dinner with some friends.
